Striper rig ?'s for the RIPS

I was wondering how everyone makes up their rigs for fishing the rips with eel's and spot.

I was thinking of using the rigs I have for chunking for the rips which are 8/0-9/0 gami's with 5 foot of 40lb flouro.I also have 10/0's with 5 foot of 50lb flouro but think thats to big.So should I use these or make some differently?

If so what size hooks and how big of a leader and how long to make it?
The other thing is should I tie them to a three way swivel or just do a slide/fishfinder rig?

When using spot or say any other live bait should the hook be placed through the lips or through the back of head?
