Question Which Sharks are good to Eat

Which sharks are decent table fare. I have heard that in the Keys the Nurse sharkes are good because their main diet is Lobster..

Nope not them... Yuck... Down there the bonnethead, blacktip are good and the lemon is ok. Past that not much on that end. In the north ofcourse you have mako and thresher but few and far between at this end unless you get one swording. Just make sure that its not a big eye thresher or long finmako.

I was surprised when I discovered I liked thresher even more then mako... to me it tastes like mako only a little milder. I had heard different guys say that for years and I always thought they were just trying to be different... after all we never sold thresher in the fish market... but low and behold I agree, I like it better.

I heard that the sharks that urinate through the skin are not good eating, but if they have a more normal bladder they are good or is all of that a line of Bullcrap

Add Hamerhead in the NE. Caught one in a tournament and the fish cleaner gave us a simple recipe. Marinate in ginger terriyaki. Grill just till done. Watch the meat, when its colored half way up, turn, when they meet it's done.
If I remember right it had a texture like a pork chop. good eatin.

what about dog sharks?

hey guys we have forgotten about the almighty dog shark aka dog fish up here in the mid atlantic and northeast waters dog sharks are so thick that they are wiping out my inshore speices they are around inshore and offshore depending on the time of year. the fishery was closed about 6 years ago to commerical guys which they may reopen.

anyway we have all eaten dog shark if we have eaten a filet of fish from mc donalds as they bought much of this shark 6 years ago or so. england bought the bulk of this shark during this time for "fish and chip".....since the cod was so badly depleted. fact!

I believe dogfish sharks excrete urine through their skin, which is why the first thing I do is skin them, and then soak the meat overnight in either milk or lemon juice. I have never eaten one , but I give them to my mother in law, and she says they are quite good. The meat is white and flakey when cooked and there are no bones other than the spine, which is nice. I believe they are popular in England for fish & chips, and that they call them Rock Salmon.

I agree, soak it in milk or lemon juice, regardless of what type, it improves the taste. We usually gut the fish right away, without the organs, it will slow the meat from spoiling. If you do not gut them, it changes the meat taste. In the NE we eat makos and threshers, some guys eat brown sharks and say they are not bad if prepared well and soaked.

With the exception of Mako which has a urinary system all sharks mentioned excrete uric acid through their skin... Some species amonia content is lower than others. Bonnet head and thresher fall in that category. Surprisingly a blue shark is even good if eaten that day but man do they go off quick. Milk will neutralize the acid . Lemon juice though will actually cook the flesh as will lime.
