I look for where the break is butting up to the 100. The bigger the break and the more structure the better.

Sharp temperature breaks. Fish will be on one side or the other depending on the tempurature. Its kind of like fishing a tide line except the tide line usually seperates differnt color of water instead of temperature.

Look for the circle with the highest number in it and I would go there. Or take the roffers and roll it up like a telescope and follow the Judge or the Covert mission. You cant go wrong there.

    Temperature breaks,
Depending on who you get the charts from some of them claim to give you bait Etc. position.
If you see a spike in temp near shore on structure, don't be afraid to fish it. There was a time when no body went much past the Jackspot. Sometimes there on the 20 - 40 Fathom lines. Sharkin just outside the Dog one year we saw some pure flat water. Pulled lines and went to take a look.
A finger of the Gulf came in at 30 Fathoms.
Saw a Blue Marlin and spent the rest of the day tryin to hook him.
No joy but great bein there.

Look on the SST - if someone penciled in "fish here" - then you are set.

In all seriousness, I usually look for a hard break - preferably near a back flow or tongue. I try to figure out what depth or structure makes sense for the time of the year and look for a temp break at that depth
