I saw buckets mentioned above... I used to work buckets full of wet sand up a couple floors and let em back down gentle before going into tuna seasons...
My problem was not knowing my own boundaries and busting bones hanging on a little too long. What I've gone to is also mentioned. Wind ons. I use all I can of that and just a short section at the end. Coils kill...

I know its not jumpin like a fish but he will learn how to wrap and how to let go keepin him self clear
That sounds like a bad idea. I wouldn't suggest doing this.

Some important points of wiring is not crossing your double wraps and knowing when to let go before your leader breaks. It's not as much about strength as it is about technique. No matter the size of the fish or leader, you have to be able to feel your leader through the gloves to be able to guage how much pressure you may have on the leader so you know when or if to dump it.

It always cracks me up to see some hero mates trying to flip a billfish over in the air to show others on board how strong they are. Not a smart position to be in when the fish is then pointed right at you after landing. Using your head will get you a lot farther.

wire .. 2 out of three times they loose..

    control, footing or pull something...

as for wind-on's I love them... make my own and sometimes the angler has nothing left to give so your mate better be ready.

wind ons are the way to go for sure. When targeting fish with light leaders (-150) unless its a younger person who is now fully grown yet the probably wont be pulled out or crush their hands. the leader will probably break and you will lose your fish.

plus no one say you can take wraps with wind ons. you can always practice on trash fish if they are around such as blue sharks, if you have the time and the fish there.

or you can just hold on til something breaks like these guys

make sure to keep those knee under the covering boards. it saved this guy from gett pulled out. 2:21

This is a pretty good example of how to wire large fish in my opinion. This guy is really good, doesnt try to be a hero but does his best to get the fish close to the boat. On a big fish like this its always most important to consider your own safety first. Live to fish another day.

I don't think anyone has asked the original poster what he expects his mate to wire. If it is big billfish I think all of you would agree the best way for a beginner to learn is to be taught by someone who knows and if the captain does not know he should give some thought to having someone on board that does know. But I get the feeling that it is more meatfish and maybe sails. For those hand over hand is adequate and the safest way for a novice. The best way is to practice on things like skipjack and little tunny with light leaders. Work on smoothness and the ability to handle the leader in one hand and a gaff in the other. Also consider leader systems that reduce/eliminate the need for the crewman to have to wire the fish.
