Crab mustard is good
Offshore most guys set their kites up with 3 clips, but you can use only 2 if you are just starting out. If you go with 2, Aftco sales a Kite release clip set that has everything you need in it, and the clips are predrilled. All you need to do is add 80 or 100 lb braid. come back 80 feet from the kite for your first clip, then about 50 fett back to the next one.
I have not done it offshore nearly as much as I have inshore and it's mostly been for tuna, so take all this with a grain of salt and hopefully an expert will help us both out here. For live baits, I will use anything I can get, mostly been crokers or other small bait fish. I hook them through the back with a 8/0 to 10/0 Gamagatsu live bait hook and set them to flop and twitch on the surface. For artificials I like yummy flying fish, or the fang rigged mold crafts squids.
