    How To: Fileting a Striped Bass

    Continuing with the How To: Series

    Caught a few Striped Bass this week, So I shot a step by step process of how I clean stripers. I use a flexible 6 inch boning knife and follow the outline the fish gives us. Through my years as a fish cleaner I found this way to minimize waste, when practiced it can be quick also. as you do not have to spend time removing bones as in some methods.

    Skinning and trimming of all the dark meat and blood line so the finished product is sweet white flaky meat with no chance of having a fishy taste.

    I also explain a biased cut for cutting the filets in medallions that will cook evenly and quickly great for sauteing.

    I got some of those How To Eat ones coming too. If we get into them I'm sure theres a way to get you some striper out to Oklahoma.
