Well, I have tried several methods but I'm not happy with any of the results. Can you please explain How do you skin your fish. Include tools and any tricks that work for most or any particular fish for that matter.

    thanks

What exactly are you skinning? To me, dolphin are the easiest, just cut around the perimeter of the filet (prior to filleting), grab a good hold and pull it off. Tuna, pretty much the same but big fish can be difficult. I used to take it off in 2 strips per side (before the tunatool)

Fish must be ice cold and knives sharp for best skinning results

Don't know why I never tried the tool on a striper I've been doing it the old way - filet the fish and put it skin down on the table. Hold the knife at an angle and work the filet against the knife, not the other way around

I've decided to keep the skin on all of my fish until I'm ready to prep for the table. If freezing it protects at least the one side of the meat. Many recipes work with the skin anyway.

But to remove the skin I lay the fish skin down and use a nice sharp and flexible knife.

For Catfish---Nail his head to a tree, cut a ring around his neck, pull the skin down.

In all seriousness, every species is a little different. Any specific species in mind?
Most of the small meatfish get filleted almost to the tail. Flip the meat back, Fillet it off the skin. Otherwise scaled and eaten skin on.
Triggers and Spades get grilled in the skin and scales.

I am still trying to figure out how to skin an Oyester Toad.

Tilapia get thrown in the chipper/shredder whole and shot into the pumpkin patch as fertilizer.

Flat- that is the best way to fillet and skin the fish.!!!

I usually fillet both sides and then place the skin side down and use a very sharp knife and slowly work at a perpindicular angle with the fish and cut the skin off.
