I know fresh bunker is always best, but when you have some left over and want to save them for tomorrow, or a trip later during the week, what is the best way to save them for later use?

Stick them in a cooler with a good amount of ice on top and on bottom! in a sealed plastic bag they should hold pretty damn good!

Ice, Water and enough kosher salt that it starts to build up on the bottom of the cooler. Keep it iced and drain a little water to make room as needed. I've made bunker stay perfect for over a week like this when i used to work behind the counter at a shop. It's like suspended animation...
Always swimming against the tide
Layer of ice on the bottomof a cooler, then stack them like soldiers with the dorsal fin up and belly down. Fill 1 layer then ice again and the same setup with the next layer and then ice until they are all in the cooler. A final layer of ice on top then pull the drain plug and tip the cooler up some so it will drain. If they are truly fresh, you can keep them 3 days or more this way THEY HAVE TO BE FRESH TO START WITH. Firm, slimy, no strong smell, clear eyes, you can tell.

Prime time is right on! I usually "put some up" in the fall, filet them, coat them with koshar salt throughly and wrap them up in zip-lok freezer bags.
just used some at the inlet friday and they work good! During the regular season you can get them fresh (sometimes) and you may not have to put them up. I do bluefish filets the same way. I do my cutting/trimming with saltwater. One of these days I'll get a food saver but this method has worked well for me. The baits are able to be shaped (with scissors) for the strip you need and they stay on the hook.![]()
