We spent some time about 10 years ago on Cayman Brac. There was good bonefishing from the shore. We would see some at the dock everyday. Someone told us to hire this guide to take us bonefishing. He showed up in his van, met us, then we walked down to the dock at our resort!! We caught 3 or 4 there then he took us somewhere else and we caught a few more. We used his rods. there is some good shore fishing on Grand Cayman. If you look on "Flash or Google Earth", on the south side near the "tropical garden" area there is a nice cove that a friend of mine had some property on. It had some good fishing from shore as well as diving.
On the north side toward the point out past Driftwood Village there was some good areas to fish that held some Tarpon.
They also have a sailing charter that you could go snorkeling on that would catch fish you lunch and had a beach area that you could fish from. Look into swimming with the Rays and you should find one.
We stayed at the Victoria house and I could fish from the beach there, it is on the west side of the Island.We had a blast for the week we were there...
