its not that expensive from montreal if you book in advance. i go to school in montreal at the moment $80-95 to toronto with an air canada deal then direct from toronto to port of spain trinidad.
it sure beats hanging around here during winter hahaha
guess during x-mas in case of climate/temps every destin will be better than staying up on the north, ha ha.
there are also all around the year very reasonable flight/hotel package rates available for the dominican republic's east coast, Punta Cana, even that easter week of course is always fully booked and shows for that run higher rates than the rest of the year. in december punta cana does not offer big chances on billfish, there are sailfish around, but not in big quantities, but great fishing for dorado, wahoo aso, all found within the 10nmls zone.

the rooster fish i think(and i really just think, i am not sure of it b/c i am not in any way experienced in fishing Pacific waters, sorry) is what we latins call El Gallo, they get caught nice sized over 50lbs and have numerous spines out of their back(dorsal fin). if that's what you call rooster they are a typical pacific fish, caught around mexican and central american pacific waters. we do not have 'em over here.
dorados right now you get here in our locals 4 out of 5 days a week, they are running this time of the year in big schools and very nice sized, 25-35lbs is average, 45+lbs is several times a week included.
for the time frame the OP mentioned in summer it changes, we have them around in big numbers til mid july, we still get them til early september, but by then they go rare and we anyways switch from the close to shore waters to the 15-30nmls waters to target blue marlin during august and september in the Macao area north of the fishing grounds where we get dorados, white marlin, sailfish aso right now aside the canyons over more shallow water bodies of just everywhere between 20-30 fthms.
for our local waters we target mid april - end june white marlin, the same time period provides numerous and big sized dorados, during june the blues start in the areas, so end june/early july we start to run for them, even that we still get white's til end august on the half day charters closer to shore.
and yeap, there are days like today afternoon,
i have friends here for a visit this week, so we use the afternoons for ourselves to get our own dinner done, big failure today. we found several areas with feeding birds, all fu$$ bonitos, and one nicely with plenty of dorados, and we got not even one hit on 'em, seemed not to be hungry, my buddy's boat right aside of us got at least 2 of them, but still a rare failure compared to what we saw in the water around us. we raised 2 white marlin, one hooked and after 20 minutes on a 25lbs reel released, did not have more than 50lbs, the other one gave us a "Salcocho"(we name it that way when he smashes the ballyhoo and show's us the 'finger' without taking it really in, lol), so a disapointing afternoon in case of the empty fridge, we have an other afternoon tomorrow and at least it looks like the heavy wind is little by little coming down. waters are actually rough, passage over the reef been around 12ft this noon.
if you pointed the question about the Dorados towards the post about December/x-mas, we have many of them around but the breed is in december still not big sized, then a average size ranges 15-20lbs, 30lbs are the bigger ones for x-mas dinner.

"good deals" is relative buddy i guess, you are talking december.
we have in our area a cheap travel time til 5 days before x-mas eve, so dec 18th or 19th ahead rates turn to the opposite, to the most expensive ones of the year with all hotels booked/overbooked.
i would say that st lucia or barbados or any other caribbean destin runs similar, it is the time of the year when the whole world wanna "go south for x-mas eve", even that i myself do not agree on such behavior, there's no better x-mas eve than the one at home with the family, a line wet in the morning, some drinks with the boys afterwards in the late afternoon, x-mas dinner at home.
but that's just my x-mas style.
