i myself have not been giant fishing but i have always carried a mate gaff. which is a small 4 inch gaff connected to 3/8 rope.. i reach over and gaff the fish in the bottom lip and you can hang onto it and just hold it off the side of the boat.
thats what i consider swimming it.. and then head gaff it and you can walk it around to the door or pull it over..

they make some gaffs with a clevis type pin that locks shut when put through the mouth and then you cleat them off and drag em around til they get their color back and then cut their throat so they bleed out... or just loop a line through the gill and put it back through the eye and tie him off and tow him...thats it
yeah "poon" shot is usually an attempt at a kill shot, cause once you stick that dart through his gills its over
I used to use the rope through the mouth and out the gills, but now I'm using a swim hook with the locking gate. It is a lot quicker and easier than the rope. I just wish a had more chances to use it this year. anyway, here's a couple pics I got of a short we caught back in Dec. and swam with the hook before release...

the gills is the worst shot you can take...right behind the pec fin is the best....and yes they will swim back to life with a dart in their side....
