    I seen a guy do this at the canyon club one time but not this fast.
    I was hoping someone would post that video ... Fastest fish cleaners I have ever seen. The Dolphin and Tuna cleaning they do blows my mind. I must learn how to do that.

    I always skin and filet as well. I have some of those same steaks as well, and I just cut out the medallions, slather in Chipotle Mayo and, wrap in thick bacon and sprinkle with Old Bay. Cook on the grill 4-5 minutes on each side and you have one of the best things you have ever put in your mouth .... EVER!!!! 4 medallions per serving should do any hungry man. I usually do a purple sweet potato and some garlic Kale along with it. FUGGGEDABOUDIT!!!!

    The main reason I like to skin the tuna before I cut is because you can clearly see the separation between the loins. Would have been easier if we had a skin grabber thingamabob

    Skin it, then when ready to prepare....rinse well, pat dry with paper towels, heat pan with either butter or olive oil, use Redfish Magic on your wahoo bites, tuna bites or mahi bites, after first flip of 3 mins or so, squeeze lemon over the top and finish seering for 3 mins or so, remove from heat. and enjoy this mouth watering favorite.
    Guaranteed to stink up the kitchen and keep hungry mouths happy!
