    Question Venison?

    I am not a deer hunter, wish I was, I just don't have it in me. However, I am glad that I have some friends that are. A buddy of mine killed a deer yesterday and is bringing me a bunch of venison this week. It will be ground, tenderloin, and cube steak.

    Anybody have any good recipes to try???

    Nauti,

    Just about any way you cook beef, but better tasting. Don't cook it too fast. If it weren't for the meat that comes out of the wood's, I'd be a skinny feller. Frank

    My favorite two vinison dishes are county styled steak and grilled bacon wrapped back strap. Make the country styled steak with the cubed steak.

    The best way to cook back strap and tender loin IMHO is grilled. I like to marinate it in dales marinade for about 2 hours (gives it good flavor and tenderizes the meat) the butterfly it, wrap it in bacon, and throw it on the grill. Don't let it get too done or it will dry out. I like it medium rare.

    Gonna fix fresh backstrap Mon. for dinner, I'll add pics with recipe. Very simple.
    Trim backstrap and cut in 2 pieces.
    Use a handle against meat and cut length to 3/8"-1/2".
    Rub
    1/2 tsp each black-red-white pepper.
    1/4 tsp garlic powder.
    1 tsp basil.
    Sprinkle rub between each slice including roasted garlic teriyaki sauce.
    Cover outside with dry rub then sauce.
    Cook on charcoal fire with mesquite wood chips 7-8 min per side.
    Serve with A-1 Smokey Mesquite/Pepper Jelly blended sauce.

    I'm fond of medalions (Cube steak) floured and fried in butter... Add water to the pan along with mushrooms, onions, and some crushed garlic. Cook it down some then add a cup of burgandy and put the meat back in... Cook down til thick and serve over rice...

    looks just like mine!!! agree with the overcooking, SO easy to overcook, think that's why marinating works so well. if you like your steaks medium, cook the venison to medium rare. it's lean meat and will dry out real fast ... good luck!

    Backstraps wrapped in bacon and maybe a bit of soy. No marinading the straps for me...they are already tender and I love the venison taste. Our Jersey deer were corn fed and better than beef as far as me and my family were concerned.

    Throw on a hot grill, sear quickly with a blowtorch, eat real red and rare. Delicious!
