Capt. Lee - just re-watched the video... never gets old.
Question: Have you tried a "drag anchor" instead of a drift sock? We use'em over here to drift sand/oyster bars.
Mine is a 4' section on steel pipe that I've filled part-way w/concrete.
I hear you... or "they" hear you! I've been thinking of modifying the anchor with some sort of spray on coating like the Rhino-Liner so it wouldn't cause so much racket over oyster rocks (as I'm pretty sure I've had the same experience as you with the fish being spooked).
I'll give the "sock" a shot... do the oyster rocks tear it up.
