Eatin' on a fresh, local 30# halibut (mega-flounder) myself for more than a few days. $19 bucks a pound in the markets out here and worth it, but this one was sport caught "bounce balling" a Spider and came from my pal Rick. YUM! (He also got an 18 pounder.)
But, hoo-baby, dat groupy looks mighty fine to this old barnacle! Down in Cabo we used to stuff 'em with lobster tails that the boys dove for and picked, huge local prawns right off the shrimp boats, big old chunks of crab meat, lots of fresh chillies and sweet onions and other vegies, slather them in salsa, sew 'em shut, then sling 'em on the big barbeque over burned down desert mesquite, cover the grill with a wet blanket soaked in beer, keep it wet, turn the fish once, then take it out, plop it on the table on newspaper, cut it open and goodgoshmighty, pass the cervesas frios, amigos! Food for the gods...or in this case, a bunch of fishermen and their families.
Too bad we can't do a bi-coastal swap there, Hoony!
