As far as current goes it spins less with the tail trimmed and you'll have alot less twisted up leaders on the drop in deeper water.
I forgot to mention that when you do set up on a fish and hook them the line cuts thru the bone without fraying the line. If you miss the hookset wait for a bit as chances are you will still have bait. It should save you a little money on bait and maybe a few more fillets in the fridge.
My favorite part of most cutbait will always be the head section hooked from bottom of mouth thru top of head, but always have tail sections left over. This seems the best method to dispose of them properly.
