Was on the way to the beach the other day when we passed a nice 25 lb or so snapping turtle crossing the road. We hopped shot some pictures and helped him to the other side of the ditch. That sucker had some long finger nails.
Then my buddy calls me and says he is stopping by after going to the farm to shoot some whistle pigs. Pulls in and flips down the gate to show me four baby coons that came out the combine when they started it up. I sent him down the street to the pastor, he has about 15 coons/bear dogs and that would be some good training for the younger dogs.

one of these days I'm gonna eat one of them snappers, something I've missed in the outdoors.

Turtle stew is great. I haven't had since I was a kid. My uncle used to set limb lines and jugs for 'em. July 4, we'd always have turtle stew.

Turtle Soup!!!!!! I used to catch them in the pond behind my house when I was young and give them to the neighbors housekeeper because she loved turtle soup.

COOTER PIE
fresh cooter
half cup stewed tomatoes
1 cup sweet milk
1 cup stock (broth)
1 tablespoon whiskey
celery salt
red pepper
2 hardboiled eggs
2 slices crumbled toast
Whostershire
2 tablespoon butter
1 tablespoon sherry
mace
black pepper
Cracker crumbs
Drop live cooter in a pot of boiling water. Cook 45 minutes. Open shell with a saw and take out the meat, fat, liver, and eggs. Be careful not to break the gall. Take the meat from the feet and legs. Put in a pot with water and salt. Stew till tender(hour). chop meat, liver and eggs. Add stewed tomatoes, milk, stock, eggs, butter, whiskey, sherry, bread crumbs and seasonings. Put into the shell (yes the cooter shell) cover with cracker crumbs, dot with butter and bake in 375 degree oven for 45 minutes.

Well thanks beagle Lady. Whats with the boiling drop in the pot thing! It don't worry me none but is it for the flavor of the meat or just ease of handling of something that can remove digits
sounds so great, that recipe going to try it with a couple of tortoise, they don't bite and they don't stink
next time I'm down Galapagos way, plus they are big enough for a village to feed on.
