    Smoked mac recipe? for a sail dog photo?

    Hey sfc,

    I want to try my hand at smoking some spanish macs that we caught yesterday. I have never smoked anything I have a bud with a bad ass smoker and we were gonna try it out tonight any suggestion for glazing or anything would be of use.
    We were gonna hot smoke them for an hour or so since its monday and we aint got 12 hours for it.

    The sail we released out of Hatteras two weeks ago while wahoo fishing It was the ugly bearded guys first bill fish and we tried to throw him in the drink but he's about double my weight so that wasnt a success ( thats me on the left in the photo, on my diesel powered 29 sea vee)

    I smoke a fair amount of fish - mostly king, tuna and Wahoo Bellies and some salmon.

    First brine the fish for about an hour...
    Remove fish from brine, rinse
    sprinkle with Lawry's season salt
    Allow the fish to air dry for 15 - 20 minutes
    place in the smoker ( I prefer hickory, but apple works well)
    Smoking time will vary depending on thickness...


    Brine Recipe;
    bring a gallon of water to a boil
    add 1 cup salt
    add 1/2 cup Sugar (brown sugar works well)
    add a small handful of whole peppercorns
    You cna add herbs of choice - I like rosemary
    remove from heat and let it come to room temp.
