    Protect that Bluefin

    The dollar-yen exchange rate is very favorable to sellers of Bluefins. Top quality BFT are going for very good prices on the Tokyo market. Several very important steps should be taken after you have caught the fish. Slowly tow the fish head first for 20-30 minutes. This will help get rid of lactic acid which can result in a burned fish. Take it from one who knows, you don't want a burned fish. Bleed the fish and carefully bring the fish aboard your boat. Remove the guts by pulling them out through the gill plate, which has been removed. You do not need to remove the head, just the gill plate. Pack the body cavity with ice and put the fish in a good insulated fish bag. The link below will lead to a very good tuna bag. Good luck and Tightlines.

    Just my opinion,

    I never visit this forum, I find it trivial. However, I feel compelled to respond......Finally. I thought you meant, "Protect that Bluefin".....but you clearly meant, kill it, and get top dollar. Quite a bit of difference dont you think?
    Now, my friends, SG, LT, TP, JR, RJ, TH, WK, think the same way. We have 66,000 members here, but only box top is looking to make a living, killing and selling this extinct creature. Its quite a shame to have a guy that drives a dodge pick-up make his living, killing...... and selling this magnificent creature into extinction. I think, you should change the name of your post to, "Kill him, and Sell him" How to get top dollar for your lousy effort at being a predator.
    We need to protect Bluefin from guys that cant even spell "Extinct", dont you think?

    Excellent advice Dave. The single most important thing you can do after catching a BF is dragging it head first for 20-30 minutes. You might have to bump it in and out of gear (or trolling valve) to allow the fish to swim. Not only will you allow some lactic acid to vacate but the water running through the fishes insides will cool it alot faster than ice will.
    I personally tow it real slow for 15 min till it starts swimming, then go a little faster and push alot of water through its mouth and stomach. It won't guarantee a great price but it will get you more than what you would have gotten if you didn't.

    I wish you and your fellow fishermen in the eastern Atlantic good luck if in fact you are trying to bring the overfishing and purse seiners in line. If you are interested in the facts, as you state, then it becomes very obvious who is trying to protect the bluefin. The western Atlantic countries like the US and Canada have very strict catch controls and tagging requirements. You will not see baby bluefins for sale in this country like you do in some of your neighboring countries. BTW I agree that the bluefin is a magnificant creature. My point now as it always has been, if you harvest a fish you are obligated not to waste it. Best Regards.

    Actually, the single most important thing you can do to produce the best quality is to properly bleed out your tuna. This is much more critical than swimming it.

    Of course swimming the tuna will facilitate the metabolization of built up lactic acid, reducing the likelyhood of Yake (burned meat syndrome), but this would be a waste of time if you neglected to bleed it out!

    Swimming the fish will also give it the opportunity to cool down somewhat, but this has absolutely nothing to do with water going through its mouth into it's stomach. The water should be going out its gill apertures, not into it's stomach. You are trying to get the tuna to breathe, not drown it! Packing its belly cavity with ice will do a much better job of this anyway!

    If you want to properly chill down your fish as quickly as possible, drop it into a slurry of seawater and ice immediately after gutting. Nothing will reduce it's core temperature faster than this!
