    You don't want to know!

    Jesse,
singe fish have sold for more than $100K at the Tokyo auction, generating $200K of retail sashimi.
NC fish are not "best" quality (fat content, size etc.) and the price per pound will vary a great deal depending on state of fish and handling / prep. I think that $10 - 20 per pound of dressed fish at the fishhouse is a median price, but we need confirmation from someone more up to date.

    SB,
What the fish sell for in Japan is easily 5 to 10 times what the boat gets. I've shipped fish on consignment and every hand along the way gets a little or big piece of the pie.

Here are numbers from the last few weeks

WHOLESALE PRICES AT TOKYO CENTRAL WHOLESALE MARKET
    November 17-December 1, 2005
All prices shown are in yen/kg unless otherwise stated.
    Exchange rates are: 119 yen = U.S.$1.00
    for November 17-December 1, 2005.

    -------------------------------------------------------------------
Species/ Sales Origin Price range (yen/kg)
Date of sale volume High Average Low
    (Month/date)
    -------------------------------------------------------------------
    BLUEFIN TUNA, fresh
    12/01 7 fish Italy 3,200-3,100-3,000
    12/01 76 fish Mexico 2,700-2,237-1,800
    11/24 2 fish New York 5,500-4,600-3,700
    12/01 33 fish Spain 4,000-3,100-2,700
    12/01 4 fish Turkey 2,500-2,290-2,200
    12/01 1 fish Tunisia 3,000

    4600 yen = 38.65

This all comes down to about 85.00 dollars per pound. $15.00 a pound to 85.00 a pound I have know idea if that makes sense.
But I know first hand of buyers teling fisherman that NC fish just don’t have the fat content to get the high prices. In my opinion that is a lot of bull. The NC fish are same ones as New York and Boston fish. The Northern Bluefin as a stock tend to have the highest fat content to any bluefin much more than the southern bluefin(pacific stock).

The US east coast fish in general are always the highest priced fish when up for sale in the Japanese market. That’s because the they are the highest fat and therefore the have the best toro.

The “Small Medium” bluefin that I caught this year off NJ was some of the highest fat content fish I have ever caught or seen. When I pulled my Yanagi (sashimi knife) through the toro(belly meat) and you knife was covered in think layer of grease. I have not caught a NC bluefin in some years but those that caught were at least average and often above average.

I have not caught a NC bluefin in some years but those that caught were at least average and often above average.

The wholesale trade is a tight small network of connected so they can control the price at the docks. The was especial the case when the fishery first started. I could not believe the price some of the fish were being sold for (way too cheap).

The only thing I can see as a factor is the proper kill, dressing icing of the fish. Have not been involved in few years but saw many fish come to the NC docks not dressed at all and with little of no ice. Or worst is the belly meat butchered( that’s the where the high dollar meat is)

Are the fish from Mexico coming from the East or West Coast?

Based in the low price and volume they are from Mexico tuna farm on the West coast. I have never heard of a fishery on the Mexico's East Coast.

There are a few taken in the gulf of Mexico that I know of. There is a yellowfin fishery on the west coast of substantial size but very small specimens of bluefin. Price of tuna has been all over the place for years. I rocked on them in the mid eighties when they brough usually $10-12 a pound. I had friends in the nineties knocking off unreal checks for a while with some fish bringing over $30,000 a fish! I heard of one 630 lb fish bringoing something rediculous like $57,000.
A couple years ago though it tanked down around $1.30 a pound after White Dove set on Stellwagen... My last fish that went to market was in 2001 0r 2002... $6 a pound off Jersey. Fish was pretty raggy so I could see the low price... There are so many variables. Fat content being especially important along with enzyme levels. Then you have different buyers. Some trying to rip you off. Others wanting that tuna at all costs because he's gonna hit a home run when it hits tokyo..
