Okay, Okay .... take it easy.... LET BOX GO...
*2 lb of ground beef along with sauage and deer meat or whatever meat you like
* 1/2 lb of baby portebello and 1/4 lb of shiitake mushroom caps
* 1 medium yellow onion
* 3 celery ribs (the inside leafy part)
* 1 large red bell pepper
* 6 cloves of garlic (all veggies chopped)
* 2 tablespoons of worcestershire sauce
* 1 bottle of beer
* 1 cup beef stock
* 1 1/2 canned chipotle peppers in adobo sauce - 2 for extra spicy (chopped)
* Chili power and 1/2 packet of chili seasoning mix
* 1 tablespoon ground cumin
* 2 tablespoons of grill seasoning
* 1 can of black beans
* 1 can of diced tomatoes
* 1 large can of crushed tomatoes
* 2 tablespoons fresh tyhme
* Extra virgin olive oil
Heat 2 tablespoons of extra virgin olive oil in a large pot and cook meat. Remove meat from pot. Add more extra virgin olive oil and brown mushrooms until tender. Add onion, celery, bell pepper and garlic. Cook 10 minutes over med-high heat until tender. Return meat to the pot with veggies. Season with worcestershire sauce, chipotle peppers, chili powder, chili seasoning packet and cumin. Add beerand cook for 3-5 minutes. Add black beans, diced tomatoes, crushed tomatoes, beef stock and thyme. Cook for at least 20 minutes but the longer the better.
I am glad you enjoyed the chili. Although I must confess that this is not my receipe but I have tweeked the original receipe a bit.![]()
