We used that to back our downrigger base.

2" thick Starboard is like a 2x4 bro, i think that might be over kill and not really fit under there too well.

it is thick.. but for heavy duty stuff i like to use heavy duty starboard..

it is thick yes.. but you can use 1 inch if you want.. we used 1" for backing on my buddys parker when we put his outriggers on there and it held fine.. so 1" would be good!

unless the rod holder is straight up and down, 2" anything will not work. you would not be able to get the washers and nuts on without having to angle the bolts and making the top of the bolts look like a monkey installed the damn thing! In the past we have used backing plates out of old aluminum street signs doubled up. work just fine!

I eventually want to add a pair of swivels to my boat when I finally collect gear bigger than 50's.

Where would you guys recommend mounting them??
Was thinking one on each side but where is the best to avoid the outboards?

No expert but my 2 cents

I would put your first starboard second holder if your running the sniper set-up. Assuming your right handed the handle will be in the boat so you won't be reaching out to crank. More importantly you will have to unclip the planer and need to be able to reach the leader near the rod tip. I wouldn't want to reach out over the motors to unclip it...
I don't think you would have any isses with the motors/rod/line angle...

Jay first off short butts dont work in standard rod holders, they will fly right out and second use the proper swivels deep holds
no incerts on 200 plus fish you can always tight the nut on the
swivels and third use the SS backing plate that manufacturer
makes for the holder and it also comes with the clip hole to
attach the rod safety line to do this right, I have seen lost teeth
and black eyes on swinging rods
