Might want to surf their website or Emerils also, I saw him cook some kick ass duck not long ago.

Give the Grillin 'n' Chillin forum a search. There's some pretty good ones in there.
I do a lot of southern fry and stir fry, and lay on a bed of rice or sometimes, garlic mashed potatoes. Biggest thing I can tell you is cook it rare to medium rare, do not over cook it.
For Island duck, small jar of marmalade 6 or 8 oz, 1 to 1 and 1/2 spoons of dry mustard and mix together. In sauce pan, heat up jelly till melts, at last minute, add a handful of graps.
In another pan, sauté duck breasts (season to taste with salt, pepper, garlic ) rare and remove from heat, lay on a bed of rice, potatoes or blanched Spinach, and pour the Marmalade sauce over the duck...enjoy...![]()

A whole Black Duck left to slow cook in a crockpot with thirteen bean soup is my favorite.
