    dark spots in wahoo....

    I was down at Marathon FL a few wks ago and caught a couple of nice 'hoos. When I went to filet the largest, I found some rusty/reddish brown spots in the flesh of the fish. Skin looked normal. Mostly in the belly filets, but a couple in the better meat. Nothing alive in them. I didnt see anything odd in the abd cavity. I contacted a marine biologist....he'd never seen it, nor had Fred Archer. I was tired and didnt save any of it or take pics...........and I've already eaten alot of it.....no problemas. Just curious if anyone else has seen this.

    Could it also be bruising from coming into the boat and flopping around in the ice box? I've never really thought much about it but have seen discoloring in fish meat before. With their meat being so white in color, it would stand to reason that bruising would stand out like a sore thumb.

    Had a couple of Dolphin like that this year. As I was messing with it I felt something hard in it and pulled out a piece of a broken bill out of the meat.. ??

    Parasites in Wahoo?

    Now anybody that has fished with me knows that i am an AJ fan. that's right the amberjack is one of my favorites when it comes to the table. nothing like a little reef donkey sandwich. i have cooked many meals for friends who were unaware that they were actually eating reef donkey instead of a big slab of da grouper. what is it you say, worms, parasites????????????? are you not standing there with a friggin knife in your hand, get to hackin' my brotha'! well, go to florida and tell them that the meat is no count! if you knew half of what you ingested on a daily basis you would be sick! how many times have you paid for a meal with your dollars and then eaten. money is one of the filthiest things on earth, it is like a big cellulose sponge sucking in every bacteria known to man.

    now you say you would much rather eat a clean fish such as dolphin, wahoo and such. well, here is a little known group of facts on our favorite little speedster of the deep! that's correct, read it and weep 18 count them, 18 parasites are found in wahoo on a regular basis but the most common is the digenaen worm, a fluked variety of the parasite kingdom. can't tell you how many of these have been found in the old Hoonasties as they have hit the cleaning table.

    Thats why I tell the charters they are no good to eat and we use the wahoo for crab bait. It works every now and then.

    i like to tell people that are on the boat that they would rather have the king mackerel instead because the wahoo are loaded with mercury and taste very fishy.!!!!

    Have seen this exact same discoloration in dove breast meat and duck meat.
    I guessed the same thing old wounds. It looked almost mustard yellow in color and was alot more firm than the surrouding meat.

    Also seen this in some fish meat as well. I guess animals scar tissue is a little different than our own.
