these fish get shipped to Tokyo for auction. Given that the belly meat (toro) is most valuable, they are not "cut" on the boat, rather all innards are removed through the removed gill plate you see in these photos, then the fish is packed with ice and delivered to a buyer at Morehead. The buyer then removes the head & tail, weighs the "core" and issues a ticket to the fisherman for "core" weight.
