I just posted this in the Grillin and Chillin section but I had to share it directly with my family over here in Box's world.
I found some "fresh" wahoo at the local Harris Teeter so I scooped up a piece for dinner tonight. I actually combined two of the recipes (Sea Draggin's recipes) that I had found in the G&C forum and added my own little twist.
I used medium size medallions of Wahoo with the skin removed and all of the red cut out. I made a mixture of 1/2 Chipotely pepper spiced mayo, 1/2 regular Hellmans mayo, and some Old Bay seasoning and mixed it all together in a bowl. Then, I covered (slathered completely) the fish in the mayo mixture and then wrapped them in thick cut bacon. I grilled it at high heat for about 5 minutes per side and......
IT WAS THE BEST FISH I HAVE EVER PUT IN MY MOUTH!!!!!!My wife agreed. It was so moist it was like a piece of filet mignon.
AND.... this was "product of Ecuador" Wahoo from the Harry Peter!( I know ... I am ashamed, but I gotta do what I gotta do) Imagine what it will be like with a fresh steak. MMMMMMMMMMMMMM .... MMMM.
By the way .... ate it with some boiled garlic Kale with a good balsamic vinegar, a purple sweet potato with butter and brown sugar and a nice glass of red wine. DELICIOUS. Cant wait to make it again.
