    AJ Tacos

    While experimenting with some AJ, I tried making AJ tacos with some Old El Paso taco seasoning. The end result was magic. I cubed a filet 1 pound filet of AJ and fried it with no grease 'till it would flake with a fork, then added the seasoning and 2/3 cup of water as directed. With normal taco condiments, AJ tacos have been a hit among friends and family.
    I reccomend using the spicy Old El Paso seasoing as it is more flavorful and anything but spicy. Since this "discovery," I have tried the same using some other species of fish but the results just aren't the same.

    Hahaha!! I'm always so surprised when people say they don't eat AJ. I think it's damn tasty myself!!

    Those do sound pretty tasty J, I'll have to give that a try! Look forward to catching a bunch more with ya soon!

    I made some AJ tacos on Sunday for some family and friends. I subsituted sangria for the water. Excellent!

    Hey Chris,

    No need to keep it hush..hush now...Everyone laughed at me the last two season's for Jigging AJ'S now it seems that every boat in the fleet is on the AJ band wagon..Great eating fish just cut out the section with the worms..Try smoking it, it's off the hook...

    What brine do you use for smoking AJ's? We used to smoke Suckers when I was a kid in growing up in Minnesota, they where great. We used to soak them for about 12 hours in salt water with brown sugar then smoke them for about 12 hours. We had a huge walk-in smoke house about 6x6x6. We could smoke halfed hogs in it. I've been itching on getting a smoker lately and smoking up some Spanish or Kings.

    I personally haven't smoked them but Im going to use the same set up I use for Salmon in Alaska..Pretty much the same as yours, you can't beat the brown sugar. Im going to smoke some this weekend so I'll let you know how it turns out. Try smoking Bluefish unbelievable!!!! Ken
