We use it for light cutting. If I'm cutting chunks I'll cut elsewhere, just to save the surface. The drawer is pretty much watertight as it has to be because it sits out in the rain.

If you want a great look, go with wood. For the amount of work you will put into starboard of any other material, the wood will be just as much and will look 10x better in the pit. I would go against corian, it will not hold up over time and should yellow. Starboard is better, but in the end not a ton cheaper then wood, and does not look nearly as good. What rod holders are you using? Boltless ones or no? Are you using backing plates or no?
When it comes down to it, the stanchion, rod holders,and plate will be the bulk of the expense, not the material used for the rocket portion.
I would anything that has a veneer or laminate surface, it will chip and peel over time and look horrible, you want something to last if your putting the time in.
I like the look of wood too, but..... when the butt misses the rod holder and puts a ding in the wood finish with 12 coats, it would kill me.
