Sit down Shut up And fish
My buddy has a 19 Maycraft CC that he bought 2.5 years ago with a 115. IMO it is under horsepowered. When running with 3 guys 175-225 lbs, it porpoises a lot and squats bad on plane. He has to run it just about wide open to eliminate the bouncing. As far as ride goes, it tends to pound a bit and I'm usually soaked in while sitting on the livewell/battery box in the back, although this may also have something to do with squatting by being underhorsepowered.

Crab mustard is good
props can make a big difference, the porpoising is caused from having the trim set too high and the horsepower raising the hull out of the water and not being able to hold it there the she falls most of the time there is very little your can do with a wet boat but wear rain gear
I do not know how heavy the maycraft hull is but it may be that the 115 is a little on the light side

Hide- My Wifes Logged On
I have a Maycraft 1800 and love it. Mine will porpoise with incorrect trim. The 1800 would rather ride with the bow down more than bow trimmed way up. I would imagine that the 19' is similar.
I really like my Maycraft. The boat is solid, rides good, and is easy to clean!
Good luck on your decision.
