Stem and Keel
Hey Tabasco,
Looks real good ! Wise man getting the bride involved! Remember though ,everything you buy is fifty bucks, just dont let her know what the real price is!,Ive used it for years!
Seriously , if i was doing this ,i think i'd leave the helm position alone until i was floating ,make the helm so that you can move it a little , then you can adjust your trim if need be.
By your sketch,i think i would move the helm forward a skoutch (4-6") JMO for what its worth. looks good , you going to cold mold the bottom and side or plank it over frames? keep up the good wokk and keep the pictures coming!

Really, A disco ball in your boatshop? You are too cool. And a wife that helps?!
I gotta have a word with my wife. She needs to get with it. Actually, she will help me glass when I need an extra set of hands. She got epoxy in her hair the last time. I told her it would wash out. just leave it alone..... Trying to make light of it........ A razor blade and an unhappy face was the cure. Gonna be hard to get more help now.

wife is good at helping but she is not into glassing/epoxy/etc. she's a pretty good fisher too--thats her and her tuna in the sig pic

I use a green machine
helm position
Where you have it drawn looks about right. You can use the back deck as a seat and it will be an easier ride the farther aft you are sitting. Are you going to strip the chine and sheer clamp then the hull plates? That looks like the easiest path for the shape you have lofted.
