33 Hydra-Sports with triples. Those that think twins are "nearly" as good have never run with three. There is no comparison. And 1.2 miles/gallon @ 38 knots ain't that bad! My 2 cents.
The one gets my vote for the best riding CC in the 23-25' class. I am a bit biased. Why, because she is my KenCraft 235. She handles better than any in this class, hands down. Heavy as a tank at 4500 lbs without engine. This boat is a dream to drive in nasty sea's.
Another vote for the Hyra-Sports Vector series. I have the 24' and fell in love with the looks and the layout. I can actually stand under the factory t-top (I'm 6'6"), something I cannot do with most other boats. The high gunnels are great too. Livewell in the transom cap. Integrated bracket so you can actually access the engine when the boat is in the water. Rides great too. Just seemed like this boat was made for me when I stepped on it. To be fair, I never had the opportunity to ride most the other boats listed. Always liked the looks of those kencrafts.
We have a 31' Ocean Master which we like a lot. It is not as light as many of the boats in the same class, but it still allows us to go fast enough to get out there quickly while offering some stability and durability. The walk around cabin provides great overall fishability while still giving us a place to sleep and store gear. The huge hold up front gives us all the storage we need.
I could not agree more with those of you that mentioned the 33' World Cat. We fished one for the Mako Mania tournament last year for a local dealer, and man, that ride is amazing! You have to experience it to believe it. The one we fished cruised @ 29 knots. That was certainly unremarkable. We were blown away, though, when on day 1 the seas kicked up to 6-8' close together wind blown slop and this thing still did 27 knots right over the top with no problem! I don't like the way the boat is configured right now, but the hull is simply amazing. The problem with the smaller and lighter cats is they cork all over the place in a sea, but this one is big enough and heavy enough and they just got it right. I think if more people did sea trials in this boat before buying a mono-hull you would see a ton more cats on the water.
One of the best mono-hull center consoles that I don't think I have seen mentioend here is the SeaVee. What an awesome ride, too. Very nice center consoles.
