Engine alarm going off...HELP!!!

I have twin Yamaha 200's. I am having an issue with my one of my engine's temp alarm going off. This only happens when I run it full throttle. I have used a temp gun and when the engine's alarm goes off it is only running at 119 degrees. This is the same temp as the other engine. I have tried to switch the sensors on the two engines thinking that there may be a problem with the sensor but that did not make a difference. Does anyone have a clue as to why this alarm may be going off when it seems the engine is running fine. This past weekend, I took the sensor off the engine and ran it over 100 miles with no problems. I would like to have the sensor on the engine in case it does overheat in the future. Any help would be appreciated.

I have 2 Yamaha 200 hpdi's The only time my alarm went off is when I had a restriction of water going to my motors. I replace my water pumps once a season and my fuel pumps every other season. Your pump may be going bad and maynot be able pump enough water at high rpms. If you do not repalce your pumps they will become siezed and are very difficult to remove which means $$$$$$$
