    57 hrtz should work with the 60hrtz, The native on your sharp is most likely xvga (1024x768) and the e120 spits out either vga 600x400 and/or svga (800x600), it should just work if it's on auto sense to correct resolution alignment. What kind of vga to rca converter are you using otherwise known as a scan converter, if there's a bunch of jumble then the resolution is not synced. (I would say not to use the converter because you will be bumping down the resolution from 800x600 to a very low composite signal. Same affect as analog signal to a digital TV) Looking at the specs for the e120 it looks like a standard 15pin HD connector and I'm assuming the sharp has the same 15 pin HD connection you could just use any VGA to VGA cable (radio shack).     48 Viking I fish on has an E-120 connected to the salon LCD and it works great. Using a VGA cable will get the job done if the run is not too long. Also the boat has one of the E-120s connected to a G-150 display and it works great. His previous boat had an E-120 connected to a M1500 monitor via the VGA cable also.
