It's going fast but that is in flat calm water and you don't know how heavily loaded the boat is. It's possible she was lightly loaded to make those fast runs for video purposes. I bet her captain does not run her like that every time he cruises to and back from the fishing grounds.
In any case, how fast another boat in another fishery can go may not have any relevance to your own situation. Their fishing grounds could be further away, or in many cases those boats are owned by individuals that can afford vessels that are bigger and faster than would be practical for an owner-operated charter boat. It's more important to look at conditions in your own fishery (how far offshore will you be fishing and the typical sea conditions) and indeed your own budget.

ps. I had a quick look at a chart for your area. Really interesting and I now understand why places like Cabo Blanco and also Salinas fish so well. How far do you guys need to go to find the fish?
