Thicker gauge stainless, the tabs on the boat seemed to flex to easily and that may be your problem effecting your hydrodynamics. But i cant be sure of this because we made this modification when we bought the boat....when we bought the boat we put it on the hard for a year and began work!
here i atatched sum pics of the boar runnin first 1 at cruise and second at top and nah we hav no extra tank in the bow. but we are going to get the props checked cuz we only gettin bout 2600 rpm at top end

since we have a swim platform anyway we took off those tabs and are putting 2 big 42 by 12 inch double ram tabs mounted on the transom. hopin to get the ass out the water and maybe gain some speed. the tabs mounted on the transom will also make the boat beahve as if she is longer

I had same boat with same 375 engines as you do ,mine was a 1988. I had same issues with low rpm at wide open throttle and chased the problem by adjusting props, changing injectors etc. In the end all that really needed to be done was to have a Caterpillar certified mechanic come on to the boat and readjust the fuel settings on the fuel pumps and the boat got back to 2800 rpm at wide open throttle and also hit 29 knots. Make sure you use a caterpillar distributor certified mechanic as most boat yard mechanics do not know how to do this correctly as there is more to it than just turning up the govenor screw on the pump. Also those engines in those years had a lot of problems with the timing gears so if you hear the engines making a popping noise after reving them up in neutral you probably have an issue there which can turn into an engine failure. I have alot of experience with that boat and would be happy to share it with you if you need any help. Owned it for around 9 years and now have a 2000 48 ocean.
