Sea witch and Ballyhoo rigging questions. Need help!

I am a complete rookie with this type of fishing/rigging so Im in need some help if anyone is wiling to share some knowledge...
Forgive me for all the questions but,

Ok so now let's assume I have some hoos and skirts.
How man skirts should be on board? Any favorite size or color?
How many hoos?
How many of the hoos would you rig up with leader, weight, and hook?
Leader lb and length?
is that an egg sinker? How many oz? .5oz?
What about hook....size? type?

Fishing S of Marthas Vineyard for small bluefin, mahi, maybe a white marlin, small yellowfin, bonito. Most all fish would be under 100lb.
