It seems that the Saragosa has a lot in common with Stella but the drag system is not as heavy duty. What is the suggested upgrade? And are extra spools with the upgraded drags available?

Carbontex drag washers are what most guys use to upgrade the drags.
bert-
if you figure out a good way, let me know. we had a 100+ bluefin melt our drag last year and shimano replaced it for free with a new drag system this winter (no charge, no hassle). i havent tried it out yet with the new drag.
I was out in CA right in Irvine, CA so I stopped by the service department and they upgraded mine but I do not think it was a new drag system or plastic parts they changed out. There are now 5 small drag washers they gave back to me in a plastic bag that were replaced. I thought they did something with a spring inside the reel in addition. My contact there was Chris Bonaparte and he is a reel tech. He told me anyone could send their Saragosa directly to him at Shimano American Corp at One Holland Drive, Irvine, CA 92618 for upgrades.

These are the original dartanium washers, along with the metal washers...I have 2 sargosas,(14000,8000and have changed both out to carbontex washers(smooooth drag)...
the stellas also have an additional drag washer configuration under the spool as well as these type on top of spool, giving it the additional drag pressure.
The upgrade is a part that is under the drag adjustment knob, that is replaced with a new part, that they were having problems on with the 14000,and the 18000.....
