I am also thinking of purchasing a kayak. I've looked at the hobie's, which have tones of options. If I were fishing in realativly deep water I'd probabably consider getting one with the mirage drive, but it is going to be worthless in water less than 12" deep. Since I'm new to the kayak fishing scene I'm thinking of going with something cheap like the heritage redfisher 12. I think the freedomhawk kayak is pretty sweet as well, but it comes with a hefty price tag.
