    smoking sailfish...

    whats everyones favorite wood for smoking sailfish? I really like apple wood for salmon and freshwater trout but wasn't sure what would do best for sailfish.

    Can't say I have any experience smoking any kind of fish but I wouldn't complain if you needed a guinea pig for tasting...

    I've had smoked Stripey & spearfish in Hawaii. I believe both were smoked with Hickory.

    I smoke a lot of king and the belly meat of tuna and wahoo over hickory as well.

    Mesquite is very nice, mellow and provides a very plesant back end flavor sensation. Put some sugar over the filet while smoking.

    I like either alder or pecan for smoking fish. Old timers down in FL use red mangrove for AJs and Kings.
