A properly de-boned Spanyard is a beautiful bait no doubt. Twenty or so years ago deboning was in vogue on the OBX. People were deboning mullets, mackerals, and everything else. Makes a pretty bait no doubt. With regards to deboning a Spanish there are two points to consider: First, if you so much as nick the skin from the inside near the tail the bait will not last 20 minutes. Second, even when all goes right, a deboned Spanyard simply will not last very long-- especially if it is rough--- 1 or 2 hours at most.
Now maybe if you juiced it till it glowed in the dark you might have a deboned Spanish last half a day, but I sure never had any luck in getting them to hold up very long.
I love me a deboned mullet, but Spanish are too soft and delecate unless you have the resources and time to rig up pile of em.
