Bottom Fishing

How far out do I need to go for good bottom fishing. I am going out of Beaufort Inlet.

Define "bottom fishing"?
Flounders and small black sea bass on the nearshore (inside of 5 miles) reefs and bottoms.
Bigger sea bass, amberjacks, some trash fish and an occasional gag grouper within 20 miles
Good gag, some beeliners, triggerfish etc within 30 miles
Best fishing offshore with all types of "typical" bottom fish.
