    Toro Recipes

    Guys,

    I have a bazilion ways to cook tuna loins.... on top of sushi. But I find that the fatty part of Toro doesn't grill well. Does anyone have a good recipe for the Toro part of a bluefin?

    I have some frozen that I want to use.

    brine it for a day and cold smoke it.

    I do it annually fo Thanskgiving w/. an October fat belly and its wonderful...

    Toro actually grills extremely well if done properly.

    Trimmed toro(1 side from 100 pound fish), with some fat cap left on

    1 cup soy
    1/3 cup extra virgin olive oil
    3 tbls. chopped fresh garlic
    juice of 1 lemon
    1/4 cup fresh orange juice
    cracked black pepper to taste

    Adjust ingredient amounts for larger/smaller belly flap

    10 minute marinade, turning 1 time.

    Get the grill surface very hot, and make sure it is very clean. Works best with charcoal or wood, but gas grills work too, just a bit messy on the lava rocks.

    Cook for 2-4 minutes per side, turn only once, and be careful when you flip it, the membranes between the lobes carmelize and split apart as it cooks, so the loose end away from the fat cap will flake.

    Cold smoked Toro is yummy, as is Toro Carpaccio.

    Let's face it. Certain food items are just better when consumed raw and are not going to be enhanced by cooking. Oysters are one, Bluefin Toro is another...
