    OT: Tsukiji pics

    Just a little show and tell for the comm. giant fishermen as well as any other tuna folks. Tsukiji, in Tokyo, is by far the largest fish market in the world, and is where many of the fish caught commercially here end up at auction. Just thought I'd share a few shots from my last trip over. Funny side note: my MIL used to own restaurants, and as such, has contacts that got us into places that 'gaijin' aren't normally allowed. It just so happened that we got to talking to one of the tuna vendors, and I had on my camera a pic of a tuna taken locally. He saw it and smiled, and said it looked like a healthy specimen, and asked where it was caught. When I told him that it was taken off the MA coast, he lit up and said, "OH, BOSTON MAGURO! Tsugoi desu neh!" (Oh, tuna from Boston. Excellent quality!" Apparently, out of the many tuna areas, many prefer the catch from New England, as opposed to that from the S. Pacific, Med and elsewhere.

    questions - what are the green squiddish looking things?

    The red fish - squirrielfish or some sort of deep sea fish?

    How do they defrost a bomb and cut it? how long does it take to come from blast frozen to cuttable?

    Finally - I see they leave the red meat on; what happens to the trimmings?

    1. Wasabi root.
    2. Some sort of snapper, I think. Note that the smaller ones are more expensive (killing babies indeed! ).
    3. Different ways I've seen, but band saw seems popular if not bought whole.
    4. Depends, but measured in days, as I understand it.
    5. Nothing, and I do mean nothing, is wasted. The pic with the folks on stools eating at a street vendor? It reads 'maguro don'. Read as tuna trimmings, seasoned and served on hot rice.
