The red fish - squirrielfish or some sort of deep sea fish?

How do they defrost a bomb and cut it? how long does it take to come from blast frozen to cuttable?

Finally - I see they leave the red meat on; what happens to the trimmings?
The red fish is red mullet, or rouget

So You think that is good??

Guys, if you think Japan is good, try the Fulton Fish Market in the Bronx, right in our backyard. Moved from the SSSeaport a few years ago the new Bronx market is amazing! Talk about variety of fish. The mahi-mahi from Equador are all at lease 20 lbs, stacked in a box, ready for sale.It is a huge warehouse buzzing with activity. The amount of seafood that is sold or passed through this place daily is staggering. The market is open from Midnight to 8am. The public is welcome and you can buy retail. If yoiu go at 5am you will rub shoulders with Top Chefs choosing from the best for the best restaurants in NYC. If you go, wear a sweater because it is always cold! It is a huge refrigerator in there. And be careful. The small hi-lo's constantly are zipping all over the place. Those forked blades may find you like a gaff into a tuna if you are not careful.

Agree that the FFM is fun and a great place to find fresh fish, but it's not even close to Tsukiji. There are more than 1000 vendors in the market, selling something on the order of 400 species of fish at Tsukiji. Da Bronx is a whole lot more convenient to get to, though. I'll give you that.

AMarshall, thanks for the fish ID.
