    Sushi42-
    I did the wifes Henckels a while ago and she cut her self first time using them. She yelled at me and said they were too sharp............... It takes some practice using this thing. It is idiot proof as far as the bevel angle with the jigs but getting them sharp takes some serious practice. I screwed up a few junk knives before I tried the Henckels. She has a nice set of farberware knives that have been useless until i got this thing. If we can get together this year i can bring it with and we can sharpen up some of your steel.
