    Fresh local swordfish

    I had a piece of gorgeous fresh local swordfish for dinner last night.

    The fishmonger checked and said it was local, from New England, not from the Carolina's.

    I have no doubt the sword's are out there all winter, but how the hell does a long liner spend a week out there in Dec?

    When they say local swordfish are they talking places like George's Bank and places like that?? Or where are Swords caught in and around NE??

    It certainly has been an angry Dec out there.....

    I know the difference between fresh and thawed. it was fresh, it was a 50-75# pup and it was Falmouth Fish Market who I believe when they say it was local.

    They had some 2 weeks ago also; same pup sized steaks.

    Larry, I was told by friends who are in the business that all swordfish and tunafish have to be previously frozen by Fed. Law so..... I would think a longline caught sword is going to be frozen at sea for sure. But hey rod and reel caught? Capt. Eric

    They are not previously frozen! That is incorrect! I have seen tons and tons of swords get unloaded from trucks at the fish pier in Boston either coming from the airport or from New Bedford and Gloucester being brought in to the Boston Fish Pier. These fish are packed in groups in cardboard coffins if they arrive via airplane, if they are landed in New Bedford of Gloucester they come in more or less the same manner as tuna being picked up by the buyer at the duck, bellies packed and covered in ice. They do arrive chilled but not frozen....

    There's no such thing as fresh locally caught sword. Freshest sword you'll get is caught off your boat.

    Some of those cores are on ice for weeks.
