Ever notice how a mack or pollack will sometimes bleed like hell from a tiny hook in the lip? Think about that before you stick the gaff in a rat. I know it can work, but it also sends plenty to the bottom every year. Grab the leader and pop the hook out or cut em off.
Granted I have not seen all that many different people wiring monster bluefin in person, but if there are two guys better at it than those two, I would be surprised. Made it look easy. But with the proper leader size anyone can do it with these smaller fish, just need to be gentle and know when to let go of a wrap. (Obviously would want to get good at it before trying to do it on fish as big as the ones in the pics...)

You don't have to worry about releasing them. You just keep them on the Kevlar line and see if they release themselves.
Since fishing isn't catching they'll probably release themselves.
If they don't release themselves and happen for follow you home on the end of that Kevlar line, and if that line is out far enough so the tuna lands itself on a beach where your friends in a beach buggy happen to be hanging out, well then it seems to me that there's no problem, as long as you cut the line once Charlie washes up on da beach.
Consider him released at that point.
