Amberjacks must be the exception to the rule. When we would drop to the bottom, then speed reel it back to the surface, they would really eat it up. "Di hrd" told me, with them around, if your jig is still in the water, you are still fishing, so be alert.
Different fish respond to jig differently and you got to adjust your jigging method.
For some fish like AJ, bluefish, yellowtail, the faster you crank the better. Tuna respond to slow moving jigs and fast moving jigs. Most groupers don't chase fast moving jig much, but scampi sometimes hit when you crank fast off the bottom.
