I, and those I fish with, do not use assist hooks on any of our jigs when bottomfishing. Mostly treble hooks on the bottom, occasionally a single hook on the bottom for the larger jigs

Assist hooks do work best when hi speed jigging for pelagics in the water column.

Good luck'

Bucktails do work great also. Use one big enough to keep you in touch with the bottom. A grub attached can add a little more action. Just my 2 cents. Good luck.

i'll switch back and forth between the diamond jig and butterfly jigs quite a bit so i find it easier to just leave the assist hook on. i really haven't noticed it to make much of a difference. i just like keeping it simple.
