FinRazr I bought a FoodSaver brand vacuum sealer at bed bath and beyond, I really like it. It works great... was $189 I believe for stainless steel. I should have had this thing a long time ago!
I have a friend who bought a cheap one and it didn't work well at all... he ended up buying the same one I have. I think as long as you spend a little money for decent quality you will be ok...
Ive got one from Wal-Mart. I think its called the Food Saver. I paid around a hundred bucks for it. I have used it for close to five years now and have packaged quite a few deer as well as a ton of fish. I put tomato sauce and soup in the bags and seal them as well. Then I freeze it. When I want them I toss the bag and all into boiling water to heat up. I love mine. I have vacuum sealed stuff on the boat as well, because I dont have a lot of dry storage.
I also have a Food Saver - It has been very good. We use it for a lot more than fish - Soups, coffee beans, etc.
One thing I have found is that it is usually just about the same cost to buy the pre-made bags rather than the rolls - less waste and a HUGE time saver. Not that the bags are cheap...
I haven't had any fish freezer burned since I started using it.
Watch for Kohl's sale notices they have them for sale for about $60-70
I recomend the Food Saver also! Don't buy the cheaper one if you are intending on using a lot. I used mine a lot and burned out the cheaper model. So I went & bought the $279 model 5 years ago and it's still going strong!

I also have the food saver at it works great. Picked it up from Bed & Bath for around a hundred bucks. Buy the roll of bags that way you use only what you need.
Darren, I say with all the wind you have in your sails, you just suck the hell outta the bag and freeze it...
